Properly designed cold rooms and cold storage facilities are essential for preserving food, pharmaceuticals, agricultural products and other temperature-sensitive goods. Why Are Cold Storage Applications Important? A cold storage facility is not simply an area where the temperature is reduced. The temperature, relative humidity, airflow and hygiene conditions must be continuously maintained according to the characteristics of the stored product. A poorly designed cold storage room may cause product losses, higher energy consumption and increased operating costs. For this reason, the product type, storage capacity, loading frequency, insulation, door design and refrigeration equipment must be evaluated together during the design stage. Temperature Control Temperature control is one of the most important elements of cold storage applications. Fruits, vegetables, meat, dairy products, fish, frozen foods and pharmaceutical products all require different storage conditions. Therefore, a single temperature setting is not suitable for every product group. Temperature fluctuations during storage may cause ripening, softening, discoloration, flavor loss and microbiological deterioration. Some fruits and vegetables may also suffer from chilling injury when exposed to temperatures that are too low. When designing cold room systems, the following points should be considered: The recommended temperature range for the stored product should be determined. Room temperature should be measured with calibrated sensors. Temperature data should be recorded regularly. An alarm system should be activated when temperature limits are exceeded. Door opening frequency and the introduction of warm products should be controlled. Fresh products are commonly stored within a chilled temperature range, while frozen products generally require temperatures around -18°C or below. The exact temperature must always be determined according to the product specifications and applicable storage requirements. 2. Relative Humidity Control Maintaining the correct relative humidity in a cold storage facility is essential for protecting product quality. Low humidity may cause moisture loss, weight reduction, wrinkling and visual deterioration in products. Excessively high humidity, on the other hand, can increase condensation and create favorable conditions for microorganisms. Humidity levels should therefore be adjusted according to the product type, packaging and storage temperature. In general, some fruits may require relative humidity levels of approximately 85–90%, while green vegetables may require around 90–95%. Other vegetables may commonly be stored at approximately 85–90% relative humidity. These values may vary depending on the product and storage conditions. Modern industrial refrigeration systems can work with temperature and humidity sensors to provide more precise control over storage conditions. 3. Water Vapor and Condensation Control Condensation may occur in cold rooms because of temperature differences and high relative humidity. Condensation on walls, ceilings, evaporators or product packaging can lead to hygiene problems, mold formation and product deterioration. The following measures can help reduce condensation: Walls, ceilings and floors should be properly insulated. Vapor barriers and panel joints should be carefully installed and inspected. Door gaskets should prevent air and moisture leakage. Evaporator drainage lines should be checked regularly. Air circulation inside the room should be balanced. Cold-room doors should not remain open for unnecessarily long periods. Correct insulation and suitable equipment selection reduce condensation risks and contribute to the operation of an energy-efficient cold room. 4. Sanitation and Hygiene Hygiene is one of the most important requirements in a cold storage facility. Products such as fish, citrus fruits, meat and dairy products may easily absorb odors from other products. Different product groups should therefore be stored separately whenever possible. If the same room is used for different products, thorough cleaning and odor removal should be carried out before a new product group is stored. Floors, walls, shelves, doors and drainage channels should be cleaned and disinfected at regular intervals. Insulation materials, surface coatings and wood preservatives used in the facility should be suitable for food-storage environments.
